This makes for a great recess option or after school snack!

Makes 24 muffins

Ingredients:

·        Canola oil spray

·        2 cups self-raising flour

·        2 teaspoons cinnamon powder

·        ½ teaspoon bicarbonate of soda

·        1 tablespoon chia seeds

·        1 cup rolled oats

·        ¾ cup honey

·        2 eggs

·        1 cup low fat natural yoghurt

·        ¼ cup canola oil

·        3 small ripe bananas (mashed)

 

Method:

1.    Preheat oven to 200 degrees Celsius and lightly grease the muffin trays.

2.    Sift the flour, cinnamon and soda into a bowl.

3.    Add the chia seeds and oats to this mixture and stir to combine. Set aside.

4.    Whisk the honey, eggs, yoghurt and oil.

5.    Add the mashed banana.

6.    Pour the wet mixture into the dry ingredients and mix with a wooden spoon.

7.   Spoon mixture into muffin trays and bake for 15-20 minutes or until golden and cooked through.
